Patatas Bravas Recipe: Ingredients
- Tinned tomatoes
- Fresh parsley
- Red chillies
- Mayonaise (or yoghurt)
The prep for this dish is minimal. Start by slicing onions, garlic and chopping up the chillies. Leave the chilli seeds in for that extra kick.
Fry those three ingredients off in some olive oil over a low to medium heat.
After 5-6 minutes, add in the tinned tomatoes.
While the sauce is cooking, peel and dice the potatoes. It’s important to get a nice even sized dice so that they all cook evenly.
When the sauce thickens up, season it with salt and pepper and blend.
Heat up a frying pan with a generous amount of olive oil. You want it to be on a medium to high heat and hear a sizzle when the potatoes land in the pan. Keep tossing them or use a plastic spoon to move them, so that they don’t stick.
Add chopped garlic to the mayo. You can use yoghurt as a replacement if you want a slightly healthier version. Mix the sauce up.
The potatoes will start to slowly brown. It is super important to control the temperature and get that wonderful even golden brown colour. Keep tossing them on a regular basis.
After 8-9 minutes, the potatoes should be golden brown and super crispy. Season with a little salt and pepper and place on a plate ready to dress the dish.
Spoon the lovely spicy tomato sauce liberally over the potatoes.
Add the garlic mayo and chopped parsley.
Serve them up immediately. You want to eat them when the potatoes are still super crispy. You could serve them with cold meats or other tapas-style dishes but this patatas bravas recipe is equally delicious on its own.
A quick and tasty Spanish snack!
