Salads can often be a bit bland and leave you still feeling hungry, but this recipe for a chicken and mango salad is a dish that will leave you fully satisfied. Juicy, tasty and super healthy.
This is the latest dish in our series of recipes that all feature just 7 ingredients and are ready in less than 30 minutes.
The real beauty is that apart from quickly cooking the chicken, this is a simple assembly job. There is very little skill involved, yet you will be creating a restaurant-standard dish.
Chicken And Mango Salad: Ingredients
- Chicken breast
- Mango (as ripe as possible)
- Cherry tomatoes
- Cajun seasoning
- Cos salad (Iceberg would also work)
Start by picking the very best salad leaves and discarding any of the bruised or brown outer leaves. Add them to a bowl with the chopped cherry tomatoes.
Peel the mango. You will then need to run your knife around the edge of the large stone that you find in the centre of mangos. Once that is done, you are left with pure flesh. Slice it into thin strips.
Slice the chicken into thin slices. This is so that it cooks quickly and there is a large surface area to absorb the tasty seasoning.
One chicken breast should yield about four thin slices. Rub them with salt, pepper, the cajun seasoning and a little drizzle of oil.
Heat up a large griddle pan (a frying pan will do if you don’t have one) until it it is smoking hot. Place the chicken down and leave it cook. You don’t need to move it around at all. It will take about 2 minutes to cook on each side. It should be white through to the centre when cooked.
While the chicken is finishing cooking, add the coriander leaves and lime to the salad. You can also drizzle a little olive oil for extra flavour and goodness.
Layer the mango onto the plate first, before topping with some of the salad mix.
When the chicken is cooked, remove it from the pan and let it cool down. If it is too hot it would wilt all the salad. Slice it into thin strips.
Layer the chicken onto the salad and mango.
