These fiery sausage scrambled eggs are the perfect treat if you want to spice things up at the weekend with a delicious home brunch. This dish is good as anything you’d eat in a fine dining restaurant, plus you will be delighted with your new-found brunch skills.

So, invite a couple of friends over, or gather the family up for a serious treat. You could use normal sausages, but the fiery kick of a good spicy Italian version is what makes the dish so special.
Fiery Sausage Scrambled Eggs
- Spicy sausages
- Fresh spinach (or similar soft green leaves)
- Red chilles
- Scallions (green onions)
- Black pepper
Get all the prep done in advance, including slicing the bread, as this is a quick dish to cook! Dice up the green onions and chilies.
Heat a large non stick frying pan and start off by frying off the green onions, spicy sausage and the chillies. This should be over a medium heat to extract maximum flavour.
At the same time, rub the bread with a little olive oil and some black pepper and place it in a griddle pan. This gives it a lovely crisp texture but you could also use a toaster (without the oil on the bread!) if you don’t have a griddle pan.
After a couple of minutes cooking, add in the baby spinach. It won’t take more than 30 seconds at most to wilt down.
Whisk the eggs together in a bowl and season with a little black pepper. They’ll cook very quickly, so have a wooden spoon or spatula ready to keep them moving when you add them to the pan.
The whole process should take less than a minute. Remove the pan from the heat before they are fully cooked, as the heat within the pan will keep cooking them. There is nothing worse than overcooked, dry scrambled eggs.
Serve up immediately with a sprinkling of green onions over the top for extra colour.
