Goat Cheese Crackers: Ingredients
- Sirloin steak
- Goat cheese
- Red peppers
- Garlic
- Basil
- Crackers (we used multi-seed)
- Red onions
The prep is pretty straightforward, but do try to go for quality on the steak and the goat cheese. They are the key ingredients here, so pick something organic, local and artisan (if at all possible.)
Add the sliced peppers and onions to a large pan and cook over a low to medium heat for 10 minutes. You are looking for a slow and sweet caramelisation at this stage. There is no rush!
Once they’ve softened up, add the garlic and cook for another couple of minutes.
Turn the heat up, move the pepper mix to one side and add the beef (seasoned with salt and pepper.) Flash cook it for about 45 seconds max. All you want to do at this stage is brown it.
Layer the mixture onto the crackers, which you should place on an ovenproof baking tray or dish.
Crumble a generous amount of goat cheese on top and top into the oven at 200C / 400F for 3-4 minutes until the cheese starts to melt.
Serve up immediately with chopped basil over the top and a little cracked black pepper to finish them off.
If you are stuck at home or planning a big night in, then make a big batch and finish them in the oven at the last minute. Ideal!
These goat cheese crackers are the perfect TV snack or treat to make for a movie.
