With covid-19 continuing to march on across the United States (And elsewhere) many are torn on how to celebrate the holidays this year. Many Americans are opting to stay in, some are looking to indulge in resort pods, and others are looking to get away just about anywhere. If you’re not quite sure how to celebrate Thanksgiving, we’ve got one word: Cabo. This year one of the world’s best chefs, chef Mads Refslund, is teaming up with two Los Cabos hotels to create the Thanksgiving feast of a lifetime.

The two resorts in Los Cabos are part of the Auberge Resorts Collection – Chileno Bay Resort and Residences and Esperanza. Recently the resort moguls announced that chef Mads Reflsund would be hosting Thanksgiving in Cabo with a limited series of exclusive dining experiences over Thanksgiving weekend. Guests will have the opportunity to experience one of the most delicious meals to come out of Baja. Roger Ponce, GM of Chileno Bay, is very excited. Guests will have the option to choose from a private or intimidate outdoor group dinners.
Chef Refslund plans to take mainly from the surrounding Sea of Cortez and the areas organic farms. In a statement to Travel + Leisure, he said this. “The seafood in Baja is unmatched, so Sea Urchin and delicious Chocolate Clams will certainly be menu centrepieces… I will also be incorporating bright additions like squash, squash leaves, pepitas, and sunflower petals throughout for a pop of colour and robust flavour. Mexican cuisine is often served family-style, which I’m really fond of. ”
Chef Refslund has his Scandinavian heritage to thank for his cooking style
He expanded by saying “I am originally from Denmark. So I was taught to cook in a minimal-to-zero waste approach.” “This is much more common in Scandinavian and Asian countries.” … “As a result of my heritage, I am always discovering ways to use every part of the vegetables and meat.” … “People often throw leftover pieces, whether a fish head or carrot top, away because they don’t know how to cook with them. I’m passionate about illustrating how to use the entirety of a product. And reducing food waste too, not only save money but take better care of Mother Earth.”
Guests can expect much more than a tasty meal over the Thanksgiving weekend, however. Both resorts are state of the art in luxury. When you aren’t chowing down on delicious seafood, you can explore the area. Take a few dives along the nearby cove. Sip a few cocktails under an umbrella.
