1. Suppli
The term supplì comes from the ‘Italianised’ French word for surprise. These make a fantastic appetiser or buffet dish. The cheese is melted so as you can pull them apart and have it stretch like elastic.

The star of this recipe here is the guanciale, which is cured pork jowl (i.e. neck). The surface is seasoned with an assortment of salt and spices (e.g. pepper, sage, rosemary, and garlic) and its known for its high fat content that is extremely flavourful.
