If you want to seriously treat yourself, this blue cheese steak sandwich is a recipe that you need to cook up straight away. The ultimate treat meal that’s great to cook at the weekends for friends or family.
The key here is sourcing the very best ingredients. Ideally, you can support a local butcher when purchasing the steak and spend a little extra if you can on the creamy blue cheese. The cooking techniques are simple, so with quality produce you are going to end up with an insanely good sandwich.

Blue Cheese Steak Sandwich: Ingredients
- Steak (sirloin or ribeye would be best)
- Mushrooms
- Onions
- Baguette
- Blue cheese (gorgonzola is a good choice)
- Chopped parsley
- Watercress (rocket or baby spinach will also work)
Start off by slicing the onions and mushrooms. There is minimal prep involved in this dish.
Season the steak with salt and pepper and rub with some oil. Let it come up to room temperature, and heat up a large chargrill pan to a smoking hot temperature. The hotter the better!
Cook the steak for about 3 minutes on each side (depending on the thickness of the cut). Remove the steak from the heat and allow it to rest while you prepare the rest of the sandwich.
Slice the baguette open and drizzle with a little oil. Place it in the pan so it absorbs the lovely steak juices. When it’s grilled, set the bread to one side.
Add a little oil and fry off the mushrooms and onions over a slightly lower heat.
Once the mushrooms and onions have fully browned, add them on top of the baguette (which you should place on an oven proof tray or dish.)
Top the baguette with blue cheese. Don’t be shy with it, as this is meant to be a treat.
Pop the baguette in the oven at 200C/400F along with the steak for about 90 seconds to warm it back up.
Slice the steak and place it on the baguette. The best way to eat this is medium rare, but you can obviously cook it a little longer.
Top the sandwich with chopped parsley, fresh cress and the top half of the baguette.
