Cajun Yoghurt Chicken Tenders: Ingredients
- Chicken fillets
- Yoghurt
- Cajun seasoning
- Cucumber
- Apple cider vinegar
- Sugar
- Paprika
Season the chicken fillets with the cajun, paprika and some salt and pepper before adding the yoghurt.
It’s a messy job, so use a pair of tongs to completely cover the chicken fillets in the yoghurt and and seasonings.
Use a peeler to cut long strips of the cucumber. You want the outer parts of the cucumber with the skin, rather than the watery, seedy middle.
Add the cider vinegar and sugar to the cucumber. While you finish the rest of the dish, the cucumber will quickly pickle.
Heat up a large chargrill pan (or regular frying pan) to a medium heat and start cooking the chicken. They will take about 3 minutes on each side.
You want that golden brown exterior, but also make sure you don’t have the heat too high which could result in the chicken sticking to the pan.
If you want to check if the chicken is cooked, simply cut through the thickest part and make sure the meat is completely white.
Serve the chicken up with the pickled cucumber and enjoy the wonderful blend of flavours.
These cajun yoghurt chicken tenders are the perfect healthy bite. An absolute treat.
