Creamy Chicken & Mushroom Pasta: Ingredients
- Pasta (shape of your choosing, we used penne)
- Basil
- Mushrooms
- Parmesan cheese
- Cream
- Chicken fillets
- Chicken stock cube
The prep on this one couldn’t be any easier. Start by simply dicing up the mushrooms and the chicken.
Then, fry the chicken over a high heat in a large frying pan with some olive oil. Season it with salt and pepper.
When the chicken starts to brown, add in the mushrooms. You can choose your favourite type of mushroom here.
At this stage, put the pasta on to boil. We hopefully don’t have to explain to you how to boil pasta!
When the chicken and mushrooms are golden brown, add the cream. Don’t be shy – you want it nice and creamy.
Melt the stock cube with some boiling water and add it to the cream. Turn the temperature up and watch the sauce magically start to form itself.
While the sauce is reducing, grate the cheese and pick and rip the basil leaves.
Strain the pasta and add it to the reduced sauce. The sauce should be naturally thickened at this stage.
Toss the pasta so that the sauce coats it fully, with the mushrooms and chicken mixed evenly throughout. Season with lots of black pepper.
Finish the pasta by adding a good handful of grated parmesan cheese.
Serve the pasta up immediately, with lots of of ripped or chopped basil. You’ve created an incredible creamy chicken and mushroom pasta dish from scratch in less than 20 minutes.
This is comfort food at its finest.
