Dry Rub Chicken Wings: Ingredients
- Chicken Wings (we used ones with wings clipped as they’re easier to handle)
- Chilli powder
- Cajun seasoning
- Garlic
- Honey
- Sour cream
- Blue cheese
Place the chicken wings in a large bowl and cover with a generous sprinkle of chilli powder and the cajun seasoning.
Peel the garlic. You want to mince it up into a paste, so to do that slice, it into thin slices and then cover in coarse salt.
You can then use the back of your knife to crush the garlic and slide it over and over into a paste. The salt will help with this process – after a few minutes you will be left with a totally smooth paste.
Add the garlic to the wings, along with cracked pepper. There will be enough salt within the garlic paste, so you don’t need to add any extra.
Add in some olive oil to help combine the ingredients.
Use a pair of tongs or a wooden spoon to make sure the wings are completely coated. You can cook them straight away, but ideally leave to marinate for about 20-30 minutes.
Place the wings on a tray covered with aluminium and into the oven at 200C/400F. The should take about 20-25 minutes to cook.
Combine the blue cheese with the sour cream and a little black pepper to make the simple (but delicious!) sauce.
When the wings are golden brown and crispy on the outside, take them out of the oven and drizzle with a little bit of honey.
Serve them up with about a dozen wings a portion, per person.
Watch the sheer glee on everyone’s face as they tuck into these delicious dry rub chicken wings…
