If you’re in need of some good protein-infused eats, then this chicken and egg fried rice is the perfect recipe to learn. The beauty is that you can make some rice in advance and repeat the dish over a few days, switching it up with whatever veggies you have to hand.
This is another dish in our series of recipes that feature just 7 ingredients and are all super easy to make.
You can also change up the ingredients to maybe include more veg, another type of meat, or even prawns. This is just a basic cooking technique for fried rice, which once you master you will have nailed for life…
Chicken & Egg Fried Rice: Ingredients
- Eggs
- Rice
- Coriander
- Soy sauce
- Garlic
- Chicken
- Red onion
Start off by making a quick omelette. This is the best way to have lovely texture with the eggs. Beat the eggs together with a fork, before adding salt and pepper. Add to a hot pan with a little oil and swirl around a little before allowing to settle. It won’t take more than 45 seconds to cook.
Remove the omelette from the heat, roll it up and slice up into thin strips.
Slice the chicken breast up and fry it off over a high heat in a frying pan or a wok.
Once the chicken starts to turn golden brown in colour, add in the garlic and onions. You will be cooking over a high heat at this stage, so keep things moving – you don’t want anything to start burning!
Add in the rice. It is called fried rice for a reason… You need to fry it. That means moving it around with a spatula and getting it coated with all those lovely flavours.
Add in the soy sauce and let it cover everything evenly.
Return your sliced egg to the pan.
Finish the dish with fresh chopped coriander and some salt and pepper.
You can now serve up a bowl of tasty goodness that will act as the perfect fuel for your body.
