We looked at a few humble potatoes and decided to created the best fully loaded fries recipe the world has ever seen. A big boast of course, but we were up for the challenge. This is the latest in our series of tasty recipes that feature just 7 simple ingredients. They are all super tasty and can be made by people of any cooking ability.

Technically people might argue that loaded fries should be cooked in a deep fryer, but by roasting them we found a cleaner and more unique texture. The smokey and fatty pancetta takes things to another level, especially when combined with the homemade garlic mayo.

Fully Loaded Fries Recipe: Ingredients

  • Potatoes
  • Green onions
  • Mayonnaise
  • Cajun seasoning
  • Garlic
  • Pancetta (streaky bacon will also work)
  • Cheddar cheese (Emmental would also work)

Start by peeling the potatoes and cutting them into perfect, evenly sized chunks. Slightly thicker works best for this dish, given they are roasted.

Douse them with olive oil and a generous sprinkling of salt.

Season them up with cajun seasoning. This is the part where you wash your hands and get in there and really toss them until evenly covered in the oil! Pop them into the over at 180C/360F. They’ll take about 30 minutes in total, but toss them every 10 minutes with metal tongs to make sure they are not sticking.

While the potatoes cook, get your prep ready. That means slicing the green onions and pancetta. Grate the cheese and also peel and dice up the garlic as fine as you can.

Place the sliced pancetta in a pan over a slow to medium heat. You won’t need any oil as it contains plenty of fat itself, which will ooze out. Cook it slowly until perfectly crispy.

Combine the chopped garlic and the mayo to make the sauce. You can also add a little black pepper at this stage.

When the potatoes are perfectly crisp and golden brown, it is time to assemble your masterpiece. Scrape them onto tinfoil…

Top with the grated cheese. We all know how tasty cheese is, so don’t be shy with it!

Pop the loaded fries back into the oven for about 3-4 minutes, which is all it will take the cheese to melt.

Next, top with chopped green onions. They give a lovely texture and add so much to the look and taste of the dish.

Pancetta

Spoon some of the garlic mayo over the loaded fries, or serve it on the side. If cooking for guests, they may prefer to dunk the fries themselves!

We’re not going to lie and say these are on the healthy-end of our list of recipes, but they are seriously good.
