Chicken, Red Pepper & Goat’s Cheese Crostini

This restaurant-style goat’s cheese crostini is the ideal dish for you to whip up at home for a quick ‘n easy bite. It makes an ideal appetiser, or a lunch treat with a little side salad.

This is the latest dish in our series of recipes that feature a max of 7 ingredients, all of which any home cook can easily make.

You’ll cook the whole thing from start to finish in less than 20 minutes, and as you’ll see from the very first bite it is an absolute taste sensation. Want a veggie version? Simple. You could just drop the chicken and add another vegetable.

Goat’s Cheese Crostini:  Ingredients

  • Baguette
  • Goat’s cheese
  • Baby spinach
  • Red peppers
  • Basil
  • Garlic
  • Chicken fillets

Start by cutting the baguette in half and drizzling with olive oil. Then, spend 30 seconds or so rubbing a whole garlic clove into the bread.

Chop the rest of the garlic coarsely and add to the chicken along with olive oil, salt and pepper. Let it marinate for a couple of minutes.

Add the chicken to a large chargrill pan. You won’t need oil, as it is already coated and the chicken will take about 2 minutes to cook on each side.

Push the chicken to one side of the pan and add a little olive and the red peppers. Turn the heat down slightly, as you want to draw the natural sweetness out of them.

Remove the chicken and let it cool on the chopping board. Quickly cook the bread (oil side down only) before removing and setting beside the chicken. Keep the peppers constantly moving at this stage.

Add in the baby spinach and remove from the pan. It will take about 15 seconds max to wilt down. Season with a little salt and pepper.

Slice the chicken in half. It should be white through to the centre and perfectly cooked.

Layer the spinach and peppers on the baguette before adding the sliced chicken.

Top with the goat’s cheese and pop back into the oven for about 60 seconds so that the cheese melts and gets every so slightly crispy.

Finish the dish with the thinly chopped basil for a final green flourish.
