Let’s face it: brunch is one of the greatest meals of the week. The weekend feasts can be dominated by meat products, but this is a dish where you won’t miss them at all. This green veggies with eggs brunch dish is a treat for vegetarians and meat-eaters alike.

The beauty of the recipe is that you can switch up the green veggies to use whatever you have on hand. You could use rocket, kale, broccoli or any of the other soft leaves out there. A serious weekend treat awaits you…
Green Veggies With Eggs: Ingredients
- Eggs
- Broccolini (long stemmed broccoli)
- Sour cream
- Garlic
- Spring onions (green onions)
- Baby spinach
- Lemons
Before you start the actual cooking make the sauce, so that this part of the process is finished in advance. Simply squeeze the lemon into the sour cream and season with a little salt and pepper. Mix until smooth.
Blanch the broccolini for about 60 seconds in boiling hot water before removing it and cooling it down. You want that bite to remain in it, but it does need to be softened slightly.
Place a large frying pan on a medium heat and warm up some olive oil. Once hot, add in the thinly sliced garlic.
Cook the garlic for about 1 minute ensuring it doesn’t take on any colour. Add in the chopped spring onions and cook for another 30 seconds.
Next, add in the broccolini and start tossing the pan around so that it all gets coated evenly.
Pop the baby spinach (or whatever green leaf you are using) in and turn the heat off. All you want to do is wilt it down, which will only take about a minute. Season with salt and pepper.
Serve the green veg on the base…
In boiling water, add a splash of vinegar and make a ‘whirlpool’ with a spoon. With the water still spinning, gently crack an egg into it. Let it swirl for 2-3 minutes to make the perfect poached egg.
Add the poached egg on top of the green veg. You can carefully flip it over to the other side, which might be nicer for presentation.
Finish the dish off by drizzling the sauce over the top of the veggies and eggs.
The combination of the green veggies with eggs and that creamy citrus sauce is an absolute match made in heaven…
