If you want a cheat meal-worthy loaded beef nachos recipe that can be rustled together for yourself or friends in record time you have come to the right place. Many recipes for beef nachos feature over a dozen ingredients and take quite a while to make, but we know most people don’t have that sort of time. So, this is quick ‘n easy.
This is the latest dish in our series of recipes that have just 7 ingredients and which are ready in 30 minutes or less.
Invite a group of friends over for a big game or a movie night, whip out a big platter of these and you will very much be in the good books.
Loaded Beef Nachos: Ingredients
- Ground beef
- Cheddar cheese
- Chilli powder
- Cream cheese
- Kidney beans
- Onions
- Tinned tomatoes
- Corn chips (to serve)
Heat up a large frying pan and bring it to a medium heat. Add in the onions and cook them off slowly, moving them around constantly for 2-3 minutes until soft.
Add in the chilli powder and cook it out for 60 seconds. You will want to use a wooden spoon or spatula to ensure it doesn’t stick to the bottom of the pan.
Next, add in the beef. You will need to use the wooden spoon or spatula to poke any lumps of beef. You want it all broken up and turned into small pieces.
Once the meat has browned off for several minutes and is taking on some good colour, add in the chopped tomatoes. You can turn the heat down to a low to medium heat at this stage.
Cook the meat and sauce out for a good 12-15 minutes until it starts to thicken up, before adding the kidney beans (strained). Season the meat with salt and pepper and ensure you are happy with the taste and consistency.
Lay the corn chips out on an oven proof dish and spoon the meat over the top.
Cover liberally with cheese!
Pop the tray into the oven for 2-3 minutes at 200C/400F to melt the cheese.
Top with small dollops of sour cream when the nachos are ready to serve.
If you are being super fancy, you can add some chopped green onions for some extra colour.
