You’ll struggle to find many people who don’t love Mexican-style cuisine and these medium rare beef tacos will have you salivating. The best part? They’re a more affordable way of enjoying quality steak than eating out. Oh, and it will taste every bit as good as anything you eat in a restaurant. All cooked by your good self.
This is the latest in our series of tasty recipes that feature just 7 simple ingredients. They are all super tasty and can be made by people of any cooking ability.
The prep is simple, the cooking time is short and the end dish is full of flavour. You will instantly fall in love with this recipe and make it one of your go-to dishes.
Medium Rare Beef Tacos: Ingredients
- Flour tortillas
- White onions
- Mixed peppers
- Cheddar cheese
- Cajun Seasoning
- Sour cream
- Steak (Sirloin or ribeye is best)
Take the steak out in advance and season with salt and pepper.
Fry the onions and peppers off in a frying pan with some olive oil over a low to medium heat. This process will take about 10-12 minutes. You want them soft and sweet, which takes a little time.
Heat up a chargrill pan to a smoking hot temperature. It needs to be as hot as you can get it. Rub a little oil on the steak and add it into the pan without moving it at all.
When the onion and peppers start to soften up, add the cajun seasoning. You should keep them stirred at this stage. Turn the heat right down and cook for another 2-3 minutes.
Turn the steak after 90 seconds of cooking. You want it to be browned on the outside and beautifully pink in the middle. Cook it for another 60 seconds on the flip side. Remove from the heat and allow to rest.
Quickly add the flour tortillas to the pan and warm them up. This process should only take about 10 seconds each side, max.
After the steak has rested for 3 to 4 minutes, slice it. You could cook it more if you prefer, but the ideal temperature is medium-rare for a dish like this if the meat is of good quality (try spend a little more with a local supplier for a good steak if you’re able to).
Smear the sour cream on the tortillas. Add the pepper and onion mix, before topping with the beef and the cheddar cheese. You can also eat them as an open version.
The best bet is to wrap them up and enjoy all that flavoursome goodness.
