Panfried Sea Bass With Pineapple Salsa

Panfried Sea Bass: Ingredients:

  • Sea bass (hake or cod would also work)
  • Pineapple
  • Limes
  • Tomatoes
  • Basil
  • Red onion
  • Red chillies

Start by quartering the tomatoes and removing the seeds in the centre. You should also peel and slice the onions, as well as chopping the red chillies. Leave the seeds in for an extra kick if you’re a spice-lover.

Add the red onions and chillies to a bowl.

Peel and remove the centre core of the pineapple before chopping it into small pieces. Add the chopped tomatoes and the juice of the limes.

Chop the basil into fine strips.

Mix everything together to create the perfect salsa. The key here is to taste it and season as you go. Add salt and pepper, as well as more lime juice or chillies based on the taste you want to achieve.

Season the sea bass with lots of salt and cracked black pepper, and drizzle with a little olive oil.

Place the the fish in the a hot frying pan skin side down. The key to achieving perfect panfried sea bass is to not move it around and allow the skin to get crisp over that high heat. There’s no need to be tossing the pan or moving the fish every two seconds.

Just let it cook!

After about 2 minutes, flip the fish over. The skin should be golden brown and perfectly crisp. Depending on the thickness of the fish, it should take no more than 60 seconds on the flip side to cook through.

Remove the fish from the pan and pad it dry on some kitchen paper towels.
