Traditional Peruvian cuisine can be divided geographically into three styles: seaside, mountain and rainforest. You might think of quinoa (and yes, that’s a staple ingredient), but potatoes, beans, corn, fresh seafood and roast meats are also mainstays of the cuisine.
The cuisine in Peru also has influences from immigrants throughout the years, in particular Cantonese-style foods from Chinese immigrants in the 19th century. There’s rich, hearty dishes such as fried beef, as well as lighter dishes like Peru’s classic ceviche.

As with other Peruvian seafood dishes, limes play a big part in adding a tangy, bitter bite. In the case of the Jalea, lime juice marinates the accompanying onion, pepper, and corn salad to create a fresh, mildly spicy addition to the rich fish, shrimp, octopus, and squid plate.

So what!, dishes are recognised un many countries,but chefs adapt dishes on people’culture and taste,you must be peruvian but don’t think your dishes tate the same to americans or Europeans,FinallyI recommend you to eat in a european restaurant or american and prove it!

I discovered that the hard way. Even in latin grocery stores in florida they kept trying to sell me a yellow bell pepper. I had to settle and buy actual aji peppers in a jar. I tried making it once, but it was super strong on the garlic, so now I’m not sure if I did something wrong or if the recipe missed a step, or if that particular recipe was just strong on the garlic…..

Tuna Ceviche is not a Peruvian Dish. We do not use poblano peppers. Peru doesn’t have it! We have ROCOTO.

Then they should make it clear that the recipes were “inspired” by Peruvian recipes. Point out what ingredients are authentic, and how to make substitutions. And, are any of the recipe creators from Peru?

Tu nunca has salido de tu pais,y piensas que tu comida tiene que comerse según se prepara en Perú. Well, nice try… But perhaps you should try to get the advice and recipes from real Peruvian cooks. Not from people that lived in Perú, traveled to Perú, love Perú…. etc. By the way, Poblano or jalapeños are not used in peruvian cooking.

Hello I want to thank you for your article and taking your time in promoting and showing the world part of our vast gastronomic culture, I’m Peruvian and for Peruvians our food is a passion as you probably already noticed like in the football some people get to serious about it and forget to by grateful with the writer and just educate him about his unintentional mistakes . Food is a big part of our culture and heritage and we feel very proud of it .
Now the dirty part I noticed like some of your Peruvian readers that some of the recipes you included are not very accurate and others are not included in the traditional Peruvian cuisine but more like a new trend of fusions with other countries cuisines. I’m really sorry for the correction and thanks again for promoting part of our culture we really need it in this hard times. Blessing.
