This rich cherry tomato soup is another one of our classic recipes we’ve put together which has just 7 ingredients. Cooking shouldn’t be complicated, so to encourage more people into taking their first steps in the kitchen, we are keeping things super simple.
This soup is not only easy to prepare but rich, smooth and utterly wholesome. The perfect treat for the family or friends cooped up in the house right now.
The ingredients are all simple to find; with so much flavour and lots of fresh herbs you are in for a real treat. Sometimes a simple bowl of soup can be one of the best things in the world and this is one such occasion…
Cherry Tomato Soup: Ingredients
- Goat cheese
- Red peppers
- Red onions
- Cherry tomatoes
- Fresh basil
- Creme fraiche
- Garlic
Get all your prep done in advance by slicing the onions, garlic and peppers and picking the basil leaves off the stems.
Sweat the peppers and onions in a large pan in some olive oil over a low heat. The key here is to do this nice and slowly to extract all that wonderful sweetness. This could take up to 15 minutes, but it is where the base flavour of the soup will come from, so be slow and patient!
When the kitchen starts filling with aromas and the peppers and onions are starting to soften, add in the chopped garlic.
After a couple more minutes, add the cherry tomatoes and cook them slowly for another 10 minutes until they start to blister and break up.
Cover the mixture with water. You could add a stock cube at this stage, but you’ll find with good seasoning this soup is much better left natural. Bring to the boil and cook it at a simmer for about 10-12 minutes.
Add the contents of the pot to a blender,along with a large dollop of creme fraiche. You could use fresh cream but the creme fraiche gives it that wonderful luxurious flavour.
Add a whole packet of fresh basil. The herb will be the perfect compliment to your wonderfully sweet and rich soup. Match made in heaven.
Blend it all until smooth…
Season the soup with salt and pepper and serve it piping hot, garnished with goat cheese and chopped basil.
