Smoked Salmon & Potato Frittata With Dill

Some weekends you don’t feel like leaving the house, which is why we created this salmon and potato frittata recipe. It’s the sort of brunch dish that you’d get in a high-end restaurant, but which you can cook in 20 minutes at home for a fraction of the price.

This is the latest in our series of tasty recipes that feature just 7 simple ingredients. They are all super tasty and can be made by people of any cooking ability.

You can switch out the spinach for rocket and the dill for coriander if you want to mix things up a little. Or, if you wanted a little luxury, you could sneak some cheese in there too! Feta or goat cheese would work particularly well.

Salmon And Potato Frittata: Ingredients

  • Baby spinach
  • Eggs
  • Onion
  • Garlic
  • Smoked salmon
  • Potato
  • Dill

Dice the potatoes up into small, even-sized cubes. Pop them into a frying pan on a medium heat with some olive oil. Keep them tossed around so that they don’t stick to the bottom.

While the potatoes are cooking, whisk the eggs together and season with black pepper. Slice the smoked salmon and chop the dill. There really is minimum prep involved in this one!

After about 4-5 minutes the potatoes should be softening up. Add in the finely chopped garlic and onions and keep everything stirred up.

After about another 2 minutes, add in the baby spinach. This will take less than 30 seconds to wilt down.

Turn the heat up slightly before you add in the eggs. Make sure everything is evenly spread around the pan so that everyone gets the same amount of salmon in each portion. Shake the pan around so that the egg mix is distributed in an even layer.

When the eggs have nearly cooked, add in the smoked salmon.

Top the pan with the fresh dill.

Pop the pan under the grill for about 30 seconds so that it cooks the top layer of the eggs all the way through.

You can serve it up in the pan at the table family-style with some crusty bread.

Or – if you are feeling confident! – use a plate and place it on top of the pan and flip it over 180 degrees. The salmon and potato frittata will pop out instantly and wow your guests.

P.S. It’s delicious hot or cold, so keep any leftovers for the fridge!
