When it comes to comforting and wholesome dishes, this sausage and chickpea stew will warm your belly like no other. This hearty stew is a wonderfully affordable way to make a large meal for family and friends and really helps stretch the budget without sacrificing any flavour.
This is the latest in our series of tasty recipes that feature just 7 simple ingredients. They are all super tasty and can be made by people of any cooking ability.
Ideally, you can serve this up with your favourite type of bread for dunking into that rich spicy tomato sauce. A real treat of a dish.
Sausage And Chickpea Stew: Ingredients
- Spicy sausages
- Chickpeas (tinned chickpeas is easiest and quickest)
- Garlic
- Tinned Tomatoes
- Spinach
- Thyme
- Smoked paprika (regular paprika will also work)
Start by peeling the garlic and roughly chopping it. You can also pick the thyme leaves away from the stalks.
Slice up the sausage. If using a fresh sausage the casing will break, so you will have to roll them into little balls.
Heat a large pan with a little olive oil to a medium heat and add the sausages.
Once the sausages start to brown, add in the thyme leaves.
Next, add in the chickpeas. You could try cooking your own from dried, but the ones form the can will work perfectly for this dish!
Once the chickpeas have been coated with the juice from the sausages add in the paprika and the chopped garlic. Cook for a further 2 minutes.
Add in the chopped tomatoes and turn the heat right down to a low temperature. You can cook it out for about 15 minutes until the sauce starts to thicken.
When the stew has reached the desired consistency, add in the spinach and season with salt and pepper. You can remove from the heat as the spinach will only take 30 seconds to wilt down into the sauce.
Serve the stew up exactly as it is, or add some bread on the side for dunking!
