You might be tempted to splash out over the weekend for brunch, but if you are stuck at home (as a lot of us are right now!) then this recipe for smoked salmon potato cakes is ideal. The dish couldn’t be easier to prepare, and is a great way to feed a group of friends or family on a budget.

The beauty is that you can make the salmon cakes in advance, and then just pop them into the oven to reheat. That allows you to focus on your guests – or your latest Netflix binge – and just rustle up the salad at the last minute…
Smoked Salmon Potato Cakes: Ingredients
- Smoked salmon
- Beetroot
- Parsley
- Lemon
- Avocado
- Rocket
- Potato
Peel and chop the potatoes into even-sized cubes. Bring them to the boil in a pot with water and a pinch of salt.
While the potatoes are boiling, chop the parsley as fine as you possibly can.
Make a simple dressing for the salad by mixing a generous amount of ground black pepper with the juice of a lemon.
Slowly pour in some olive or rapeseed oil to make a light dressing.
Slice up the smoked salmon and combine it with the chopped parsley in a bowl.
When the potatoes are just about soft (do not overcook them!) add to the bowl.
Mash the whole mixture together. You don’t want it to be totally smooth. Keep a little bit of texture in the mix.
Use your hands to shape the salmon and potato cakes into little patties.
Heat a pan to a medium heat and fry the fishcakes for about 2-3 minutes on each side until they are golden brown.
Peel the avocado and chop into even-sized pieces and mix it in the bowl with the chopped beetroot.
When the smoked salmon potato cakes are golden brown, remove them from the heat.
Serve them up immediately so that they are still crispy on the outside and lovely and moist in the middle.
Add the rocket to the beetroot and avocado and combine with a small amount of dressing to create the salad. Serve with a slice of lemon.
