Most people tend to eat brunch out in cafes with friends, but with this simple recipe there is no reason not to cook at home. You’ll save money and pretty much feel like a professional chef when serving this beauty up.

Steak & Eggs Brunch Recipe: Ingredients
- Fillet steak
- Eggs
- Butter
- Kale
- Potatoes
- Red onions
- Garlic
Start off by peeling and slicing the red onions. Also peel the potatoes, and chop them into perfect cubed sized pieces. The final prep is to dice the garlic, then pick the nicest kale leaves and wash them. You should do all this prep in advance, so that you can then quickly cook everything in one go.
Add the potatoes to a large frying pan (ideally non-stick) that you have brought to a medium to high heat and coated with olive oil. The potatoes might stick at the start, so make sure to toss the pan on an ongoing basis.
Season the steaks with a generous amount of salt and pepper on both sides.
When the potatoes start to take on a golden-y look on the outside, add in the red onions.
Coat the steaks in a little olive oil and rub in the salt and pepper seasoning.
When the potatoes and onions have fully cooked, add in the chopped garlic and season the mix with salt and pepper. Turn down the heat to just keep them ticking over while you prepare to cook the steaks.
Place the steaks into a large griddle pan that has been heated until it is literally smoking hot. The key is to barely touch the steaks – certainly don’t be moving around or playing with them! Rotate them once to achieve a nice grill mark across the top.
After 2-3 minutes flip the steaks over. The best way to eat this dish is medium rare, so the fillet won’t take long to cook. Cook for a further 2 minutes on the other side.
To finish the potatoes, add in the kale. This also won’t take long to cook. 1-2 minutes wilting the kale into the potatoes will be plenty.
Remove the steaks from the grill and place them on a plate to rest. This is a crucial step to ensure the meat is super tender and retains all the juices.
To plate the dish and make it look as spectacular as it tastes, add the potato mix to the base of the plate before topping with the steaks.
Finish the dish by frying your eggs with butter. You could go for a healthy poached egg, but this is a luxurious brunch dish so why hold back!
Add the fried eggs to the top of the steaks and serve up immediately.
