Larb Gai Lettuce Wraps (Thai Minced Chicken Salad)

This simple Thai minced chicken salad recipe is super simple to prepare and is full of flavour. They make perfect snacks for an outdoor party or as an appetiser, giving you a delicious flavour of Thailand in little bite-sized pieces.

This is the latest dish in our series of recipes that all have 7 simple ingredients and can be cooked in less than 30 minutes.

You can serve these lettuce wraps hot or cold too, so they are the ideal dish to make in advance of any guests arriving. They are also low in carbs, so are double up as a satisfying post-gym snack.

Thai Minced Chicken Salad: Ingredients

  • Minced chicken
  • Red chillies
  • Soy Sauce
  • Thai basil (regular basil or mint would work if you can’t find it)
  • Red onion
  • Garlic
  • Cos salad leaves (or soft style Chinese cabbage)

Peel and dice the garlic and onions and fry off with the chopped red chillies. Leave the seeds in the red chillies for an extra kick. Keep it all moving using a spatular, or by tossing the pan.

When the vegetables have softened, add in the minced chicken and turn the heat up. You want to get it crispy and brown. Season with salt and pepper. Use a spatula to break the chicken down into the smallest pieces possible.

When the chicken is cooked (3-4 minutes) add in the soy sauce and cook it until everything has been evenly coated.

Finish the dish at the last minute with the Thai basil (a mixture of regular basil and mint will also work as a replacement). Remove from the heat immediately.
