If – like most of the world – you went out and stocked up on pasta and tinned goods you are in need of a good coronavirus/self-isolation pasta recipe. We’ve got just the one for you. This classic pasta dish couldn’t be any simpler, with just seven ingredients.
With cities on lockdown, people can’t go out and eat or drink, so they are having to cook at home. One simple fact is that many people simply can’t cook or have never needed to fully learn. With plenty of times on our hands, now is a great time to learn some simple tips.
- Tinned tomatoes
- Parmesan cheese
- Pasta of your choice (we used a large penne, as it scoops up that thick sauce nicely!)
- Fresh basil
You might struggle finding fresh cheese, but we’d suggest going out and buying a huge chunk of parmesan. If wrapped in the fridge, it keeps for 4-6 weeks!
Start by boiling the pasta. If you’re struggling at this stage, it’s probably best to get someone else in the house to take over the cooking!
In a large frying pan, gently cook the onions, garlic and chili in some olive oil for about 3-5 minutes. Nice and slow to extract all that lovely flavour.
Next, add in the tinned tomatoes. Plum or cherry are best and if you spend a little more on a good Italian brand (if it’s available in stores) it will have an extra lush flavour.
Lower the temperature and let it slowly cook down into a sauce for about 15 minutes. You’ll need to stir on occasion, but the sauce will more or less form itself, so you don’t have to do much.
When ready, the sauce should look rich, thick and be super tasty. Make sure to check the seasoning with salt and pepper.
Add the pasta to the sauce. The aim here is to coat the pasta fully in that tasty sauce.
Throw on lots of chopped basil.
Add the shaved parmesan. Now, it’s not for us to give you advice on the amount of cheese, but we say the more cheese the better…
