Sometimes you just need a good comforting meal, and there is nothing that ticks that box better than this carrot, ginger and coriander soup. It couldn’t be any simpler to make and is an absolute taste sensation. Basically, it’s a big warm hug in a bowl.

You can also make a bigger batch if you want and freeze some portions to reheat at a later stage. The best things in life are simple, and that is very much the case here.
Carrot, Ginger And Coriander Soup: Ingredients
- Coriander
- Fresh cream
- Garlic
- Onions
- Carrots
- Potatoes
- Ginger
Peel and roughly chop up the onions, garlic, carrots and ginger.
Heat a pot to a low to medium temperature and sweat the vegetables off slowly. You want to extract the maximum amount of flavour here, so be slow and patient and keep them stirred until they soften up.
Next, add the peeled and diced potatoes and cook out for another couple of minutes.
Cover the veg and potatoes with water. You could add a chicken or vegetable stock cube at this stage for more flavour. Bring to the boil and then turn the temperature down, letting the soup simmer for 10-15 minutes until the potatoes are soft.
Remove from the heat and blend using either a hand-held blender or a traditional blender.
Add in the fresh coriander at the last moment. You can add stalks and all, as they are soft and contain the bulk of the flavour.
Finish with a good dash of fresh cream and adjust the seasoning with salt and pepper.
Serve up a big bowl of your carrot, ginger and coriander soup alongside some fresh bread or crackers…
