Their style is based on the BBQ that started in butcher shops in Central Texas in the late 1800’s. Beef and pork with a simple salt and pepper rub, smoked low and slow over hardwoods (post oak, mesquite, hickory), and served on butcher paper.
They do some wonderful St Louis style pork ribs, serving them up with traditional sides like collard greens and mac and cheese. They also have great chicken wings and special sandwiches but it is all about the ribs here.
