Killer Chicken Tacos Recipe
Slice the peppers and red onions into strips.
Marinate the chicken in the cajun seasoning with some olive oil for five minutes before cooking it.
Start by simply warming the tortillas for about 20 seconds on each side in a griddle pan.
Heat the griddle pan to a high temperature and cook the chicken for about 60 seconds on each side.
What you’re looking for is the slightly charred texture on the outside, without burning the chicken.
Add the peppers and onions with a little more oil and cook over a lower heat.
Cook the whole mixture for about a further five minutes until the vegetables are perfectly soft and tender.
Dollop the sour clean onto the tortillas.
Load the veg mix onto the tortillas.
Slice the chicken, ensuring it is white and succulent on the inside and cooked through.
Layer the chicken into the tortillas.
Finish by sprinkling liberally with cheddar cheese and serving family-style at the table to enjoy as a shared meal.
