In our latest recipe series for cooking in self-isolation, we wanted to created amazing dishes with just seven ingredients. Simple and tasty, these Greek-style stuffed meatballs are the dream dish.
These juicy meatballs are absolutely bursting with flavour with an oozing feta cheesy centre, then coated in a rich and delicious tomato and garlic sauce. Of all the meatball recipes out there, these might just be the easiest – and tastiest!
Ingredients
- Cherry tomatoes
- Feta cheese and olive mix
- Onions
- Garlic
- Red chillis
- Beef mince
- Fresh basil
Start by seasoning the mince meat with salt and pepper to taste, shaping up the meatballs into evenly sized pieces.
Stuff a small amount of feta cheese and olives inside each meatball, and then shape the meat around it.
Ensure that the feta and olives are well packed into the middle of each meatball!
Gently fry the meatballs in some olive oil over a medium to high heat.
Gently flip them over after about two minutes cooking on each side.
Remove the meatballs from the pan, but keep all those delicious juices in there. We need that for the sauce!
Add the chopped, chillies, garlic and onions and fry over a medium heat.
Add the halved cherry tomatoes and turn the heat down even further.
Leave them to simmer down into a sauce, over a low heat for a good 15 minutes.
When the sauce starts to form, add the meatballs back into the pan and cook for a further 3-4 minutes.
Finally, add a large amount of chopped or roughly torn basil to this wonderfully aromatic dish.
To serve, layer some of the sauce on the plate first to create a yummy base.
Pile high with meatballs, the rest of the sauce and ladle lots of the natural juices over the plate.
