Classic Medium Rare Thai-Style Salad: Ingredients
- Spring onions (green onions)
- Soy sauce
- Fish sauce
- Coriander
- Mint
- Cucumber
- Beef (Rib, striploin or fillet)
- Tomatoes
- Red onions
- Limes
- Red Chillies
- Brown sugar
Make the dressing first, by mixing the brown sugar, soy sauce and fish sauce together with the juice of the lime.
Add in the chopped chillies (seeds and all for an extra kick!).
Chop up the green onions (add them the the dressing as well).
With the dressing made, prep the salad ingredients. Pick the mint and coriander leaves and wash and dry. Slice the cucumber and red onions up as thin as you can. Quarter the tomatoes and remove the cores.
Combine all the ingredients in a a large bowl before you get into the process of cooking the steak.
Season the steak with salt and pepper and rub with some oil. Allow it to come to room temperature.
Heat a large griddle pan to the highest possible temperature. Place the steak into the pan and do not touch it. There is no need to move it around. Simply cook it for about 2 minutes on each side.
Remove the steak from the heat and let it rest for a good five minutes. This is a crucial stage. This is how the meat will become super tender. The salad is best enjoyed with medium rare beef but if you prefer it a little less bloody, cook for a bit longer.
Add the dressing to the salad and toss everything together. It is a real explosion of flavours.
The rare Thai-style salad really is a classic dish that highlights all the best flavours from around Thailand.
