Traditionally, the harsh climate and the nutritional needs of Latvian farmers dictated the essential staple foods, with Latvian dishes featuring a lot of grains, potatoes (the “second bread”), game meats and foraged vegetables such as mushroom and berries. The country’s harsh winters have always required conserving food. So, Latvians have mastered in making fruit jams, pickled vegetables, salted meat and smoked fish.

Even though they call it a pancake the soft batter is almost thin enough to call a crêpe. Latvians love adding spiced apples to their pancakes. To be totally traditional, be sure to serve them with yogurt and a healthy drizzle of honey.
