- Smoked salmon
- Red Onion
- Feta cheese
Simply slice the smoked salmon and red onions, chop the coriander and peel the avocado for your basic prep.
Beat the eggs together and season with salt and pepper.
Pour the eggs into a super hot non-stick frying pan.
Use a spatula to move the eggs around a little, but don’t overwork them. After 30 seconds turn the heat down.
Layer in the smoked salmon.
Add the chopped coriander.
Crumble in a generous amount of feta cheese. By this stage, the heat should be turned off and the eggs pretty much cooked. Immediately remove the pan from the heat.
Chop the avocado into rough chunks and mixed with the red onions, before adding lemon juice.
Gently slide the omelette onto the plate.
Finish by garnishing with the fresh avocado and onions.
